Nintai is a landmark of Japanese fine dining on the Costa del Sol and one of the most acclaimed omakase restaurants in Spain. Located in Marbella at Calle Ramón Gómez de la Serna, the restaurant was conceived by sommelier and restaurateur Marcos Granda, who has built a portfolio of some of Spain’s most internationally recognised restaurants, and operates on a model of absolute exclusivity with just twelve seats at a single wooden counter. The name Nintai is the Japanese word for patience, a virtue that pervades every aspect of the experience, from the sourcing of the finest ingredients to the immaculate preparation of each course and the unhurried, considered pace at which the meal unfolds. The kitchen follows the traditional omakase format, in which the chef leads diners through a bespoke progression of dishes determined entirely by what is at its seasonal peak. Techniques are rooted in Japanese tradition — precise knife work, immaculate nigiri, and delicate warm preparations — but applied with exceptional Spanish produce, including the finest local seafood, Iberian pork, and seasonal vegetables sourced from the surrounding region. The counter setting creates an intimate and theatrical atmosphere where guests observe every detail of preparation at close range. Nintai has held one Michelin star and is consistently regarded as among the finest Japanese restaurants in Spain. The wine and sake programme is curated with the same rigour as the food. Reservations must be made well in advance.
