EPUR is one of Lisbon’s most celebrated Michelin-starred restaurants, occupying a beautifully converted historic building on the Largo da Academia Nacional de Belas Artes in the heart of Chiado. The restaurant offers sweeping views across Baixa, Alfama, the Tagus estuary, and Castelo São Jorge from its elegantly lit dining rooms, which blend a contemporary minimalist interior with traditional Portuguese azulejo tile panels and geometrically designed ceilings by the architectural studio Guedes Cruz Arquitectos. At the helm is French chef Vincent Farges, who built his career at Michelin-starred kitchens across Europe before becoming synonymous with refined French cooking in Portugal. Farges opened EPUR in 2019, creating a space dedicated to what he calls Epurism: the art of stripping cuisine down to its essential elements while elevating each ingredient to its maximum expression. His philosophy draws on Leonardo da Vinci’s principle of simplicity as the ultimate sophistication. The name itself, coined from various language roots suggesting purity, captures this ethos perfectly. Two tasting menus are offered — Inspirações with eight courses and the more expansive Epurismo with ten — both changing daily to reflect what seasonal produce is at its absolute peak. The open kitchen allows diners to observe every detail of preparation. The wine programme focuses heavily on Portuguese producers, with expert guidance provided by the sommelier team. EPUR is listed in the Gault Millau guide and holds one Michelin star.
