Description
Liath is a two-Michelin-starred restaurant in Blackrock Market, south Dublin, led by chef-patron Damien Grey — one of Ireland’s most singular and quietly celebrated culinary talents. The name means ‘grey’ in Irish, chosen by Grey’s daughters as a tribute to their Australian-born father. The restaurant evolved from Heron & Grey, which Grey co-founded with Andrew Heron in 2016 and which earned a Michelin star within ten months of opening. When the partnership dissolved in 2019, Grey relaunched as Liath and steadily rebuilt, earning two Michelin stars in 2022. The dining experience is intimate and intensely focused — a small number of covers gathered around the chef’s creative world, with a seasonal tasting menu that changes regularly and pushes the boundaries of what Irish produce can express through precise, ingredient-driven cooking. The wine pairing features natural wines and in-house fermentations alongside conventional selections. Grey describes his approach as increasingly philosophical — food as language rather than product. Liath is considered one of Ireland’s most serious contenders for a third Michelin star and a genuine landmark of contemporary Irish fine dining.
