Odette is widely regarded as one of Asia’s finest dining destinations, having held three Michelin stars since 2019 and claimed first place on Asia’s 50 Best Restaurants list in 2020. Founded in 2015 by French chef Julien Royer in partnership with the Lo & Behold Group, the restaurant occupies a stunning 3,100-square-foot space within the Supreme Court wing of National Gallery Singapore. The interior, designed by Universal Design Studio, is rendered in soft whites and blush tones, complemented by a signature hanging installation of ingredient-pressed oak panels by artist Dawn Ng. Chef Royer’s cuisine is rooted in classical French technique while drawing inspiration from the vibrant seasonal produce of Southeast Asia, with ingredients sourced from artisanal farms in Singapore, Australia, Japan, and across Europe. The seven-course tasting menu changes with the seasons and showcases signatures such as rosemary-smoked organic eggs, mushroom tea, and heirloom beetroot variations. Every element of the Odette experience, from the sommelier’s curated wine pairings to the impeccably warm service, reflects the chef’s lifelong respect for ingredients and the people behind them. An intimate private room accommodates up to eight guests for special occasions. Reservations are in high demand and must be booked well in advance.
