Nouri, derived from the Latin word for nourishment, is a one-Michelin-starred restaurant that occupies a singular position in Singapore’s dining landscape. Founded in 2017 by Chef-Owner Ivan Brehm, a chef of Italian, German, Russian, Spanish, Lebanese, Syrian, and Brazilian heritage who previously worked at Per Se in New York, Mugaritz in the Basque Country, and The Fat Duck under Heston Blumenthal, Nouri champions a philosophy he calls crossroads cooking. Rather than aligning with a single culinary tradition, the menu explores the unexpected connections between global food cultures, revealing how ingredients, techniques, and flavours have migrated, merged, and evolved across continents. The dining experience begins with a handwashing ritual in the entrance lounge, a gesture of mindful transition, before guests are seated at a marble communal table that adjoins the open kitchen, where chefs work directly alongside diners. The tasting menu unfolds as a narrative, with motifs such as vanilla and turmeric appearing repeatedly in different guises across multiple courses. Lighter, more delicate flavours build gradually to a climactic, deeply satisfying conclusion. Nouri’s wine list is curated with equal thoughtfulness, and the beverage programme includes sake, natural wines, and creative non-alcoholic options. The restaurant grows its own tomatoes on a farm in Cameron Highlands, Malaysia, reflecting its commitment to provenance and seasonality. Nouri has been ranked on Asia’s 50 Best Restaurants and continues to attract international acclaim.
