Voro
Description
Voro is the only two-Michelin-star restaurant in the entire Balearic Islands archipelago, located within the Cap Vermell Grand Hotel in the tranquil Canyamel valley on Mallorca’s northeast coast. Led by Chef Álvaro Salazar — an Andalusian-born chef whose culinary vision combines Mediterranean roots, deep Mallorcan terroir awareness, and a fearless creative ambition — the restaurant has established itself as one of the most important fine dining destinations in Spain and a genuine pilgrimage for serious gastronomes. The name, derived from the Latin ‘vorare’ meaning to devour eagerly, captures the spirit of the dining experience: immersive, consuming, and extraordinarily complete. Two tasting menus — Voro and Devoro — offer different lengths and depths of engagement with Salazar’s culinary world, each structured around the sun’s journey through the day in sections titled Dawn, Zenith, and Sunset. Dishes blend seasonal Balearic ingredients with Salazar’s Andalusian heritage and international reference points, creating compositions of striking originality characterized by precision, memory, and a commitment to finding beauty in every element on the plate. Presentations are meticulous; the progression of courses builds with a coherent and satisfying arc. The wine cellar features over 400 national and international references. Service is among the finest on the island — orchestrated, warm, and flawlessly executed. The hotel setting in Canyamel is serene and spectacular.
