Kokotxa is a Michelin-starred fine dining restaurant tucked into the heart of San Sebastián’s Old Town, just steps from the port and the Basilica of Santa María del Coro. Its name pays homage to one of the most iconic preparations in Basque gastronomy — kokotxas, the prized dewlap of hake or cod — and the kitchen fully honours that culinary heritage while taking it in a confident and contemporary direction. Chef Daniel López and his partner Estela Velasco front of house run the restaurant with a distinctly personal touch, combining technical finesse, high-quality market ingredients, and a genuine warmth of hospitality that sets Kokotxa apart from more formal starred establishments.
