Amber is a two-Michelin-star fine dining restaurant located within The Landmark Mandarin Oriental in Central Hong Kong, one of the city’s most acclaimed and internationally recognized culinary destinations. Led by Executive Chef Richard Ekkebus, Amber has undergone a transformative evolution over the years — most notably in 2019, when the restaurant underwent a complete reimagining of its menu, service concept, and environmental philosophy, replacing its traditional tasting menu format with a more flexible and sustainable approach and committing to a dramatic reduction of meat consumption, food waste, and single-use plastics.
