Aquavit holds a unique place in American culinary history as the pioneering force that introduced Scandinavian fine dining to the United States. Founded in 1987 by Håkan Swahn, the restaurant has occupied its current home in the Park Avenue Tower at 65 East 55th Street since 2005 and has earned two Michelin stars under the stewardship of Chef Emma Bengtsson, who took over the kitchen in 2014. Bengtsson’s cooking is defined by a deep engagement with Nordic ingredients and techniques, including curing, smoking, fermenting, and pickling, all executed with extraordinary precision and presented in compositions of quiet, harmonious beauty. The dining room features a sleek, contemporary design with undulating wooden ceilings and a fully transparent kitchen pass that allows guests to observe the team at work. Tasting menus of five to seven courses showcase dishes like glazed earthenware vessels of North Sea cod with mussel foam and roasted red endive, or duck breast presented with compressed leg meat and a beet sauce enriched with duck jus. The bar program celebrates the restaurant’s namesake spirit, offering an extensive library of infused aquavit alongside creative Nordic-inspired cocktails. Aquavit also features a lively Bar Room with an à la carte menu for more casual visits, and private dining rooms suitable for corporate and personal events. The wine list is extensive and award-winning, with a bias toward Old World producers.
