The kitchen centres on two defining elements: the wood-fired pizza oven, used to produce delicious traditional Georgian breads including khachapuri, and the charcoal grill, which imparts deep, smoky flavours to an array of carefully sourced meats and fish. Signature dishes include the beef and pork khinkali, plump hand-made dumplings filled with rich broth, salmon in bazhe walnut sauce, and the classic chicken tabaka seasoned with salt and lemon.
