Chapter One is a two-Michelin-starred restaurant on Parnell Square in Dublin, occupying a beautifully vaulted basement dining room that has been central to the city’s fine dining narrative since 1992. Under the direction of Finnish chef-patron Mickael Viljanen — who joined in 2021 having previously earned two Michelin stars at The Greenhouse — the restaurant has achieved a remarkable ascent, earning two stars in 2022. Viljanen’s cooking is rooted in the classical French canon but shaped by a distinctly Nordic sensibility: immaculate presentation, restrained elegance, and an unwavering focus on the best Irish seasonal produce. Dishes are technically sophisticated and emotionally satisfying, demonstrating a kitchen that can balance innovation with the deep pleasure of food that is simply very good. The wine program is outstanding, and the sommelier team is knowledgeable and enthusiastic. Service is highly skilled while infused with the warmth and wit that define Chapter One’s character — formal but never stiff. The dining room itself, with its historic arched ceilings and intimate proportions, creates an atmosphere perfectly matched to the cooking. Chapter One is considered by many to be Ireland’s most likely candidate for a third Michelin star.
