Located on Rådmansgatan in the Vasastan district, the restaurant was founded by a team with deep experience in Japanese fine dining, including alumni of Sushi Sho, and operates with the intimate scale and uncompromising standards associated with the finest counter-style Japanese restaurants in Scandinavia. The name refers to the eponymous Japanese broth — a cornerstone of the cuisine and one of the defining elements of the restaurant’s menu — which appears across multiple courses as a marinade, a sauce, and a warming preparation in its own right. Dashi serves an osusume menu, translating loosely as the chef’s daily recommendations, which changes continuously in response to what Swedish seasonal produce is at its absolute peak. Swedish and Nordic ingredients are treated with the same reverence and technical precision as premium Japanese produce, resulting in dishes of remarkable delicacy and coherence.
