Edomae Sushi Matsuki is an extraordinary Japanese culinary sanctuary hidden in a centuries-old wine cellar beneath the cobblestones of Bratislava’s Old Town on Ventúrska Street. The restaurant was founded in 2019 by Kento Suzuki with the mission of bringing authentic Edomae sushi — the traditional Tokyo-style sushi craft historically practised in the Edo period — to a landlocked European city. The descending entrance passage, lined with black and white stonework that fuses elements of a Japanese garden with a Slovak wine cellar, creates an immediate sense of transition. Inside, a handcrafted counter of hinoki Japanese cypress wood seats just seven guests, creating one of the most intimate and ceremonial dining environments in Central Europe. Head chef Keisuke Nagasawa, who trained at the Insyokujin College Sushi Meister Course in Japan and honed his skills at a Michelin-listed restaurant, prepares every course directly in front of guests, explaining each dish in detail. The omakase menu begins with a sequence of creative appetisers, moves through assorted sashimi and meticulously formed nigiri, before continuing with flame-broiled preparations and a kerayaki egg dish, finishing with dessert. Ingredients are sourced daily from European and Japanese markets, with fish selection varying based on seasonal availability and freshness. In the inaugural Gault & Millau Slovakia 2025 guide, Edomae Sushi Matsuki received three toques, placing it among the top nine restaurants in the country. Reservations must be made at least one week in advance.
