Eleven Madison Park is a three-Michelin-starred restaurant in a landmark Art Deco building overlooking Madison Square Park, led by chef Daniel Humm and widely regarded as one of the most ambitious and creative fine dining restaurants in the world. In 2021, Humm announced that the restaurant would transition to a fully plant-based menu — a decision that attracted enormous attention and debate — but the restaurant has since evolved to a plant-forward approach in which vegetables remain central while a broader range of ingredients informs the menu.
