ION Harbour by Simon Rogan is the crown jewel of Malta’s dining scene and the country’s sole holder of two Michelin stars. Situated on the fourth floor of the luxurious Iniala Harbour House in Valletta, the restaurant offers an extraordinary combination of breathtaking Grand Harbour views and a meticulously crafted culinary experience. The restaurant is the first Mediterranean venture of celebrated British chef Simon Rogan, widely known for his three-Michelin-starred L’Enclume in the Lake District and his pioneering farm-to-table philosophy. Day-to-day culinary operations are led by resident chef Christian Cali, who executes a complex, ever-changing menu built entirely around hyperlocal Maltese ingredients sourced from spearfishermen, third-generation salt farmers, and specialist foragers across the islands. Two tasting menus are offered, a shorter and a fuller experience, both rich in seasonal references and celebrating individual Maltese producers. The wine list is exceptional, featuring approximately 500 labels presented through curated tasting journeys and an extensive selection available by the glass. The dining room, enveloped in warm natural wood with floor-to-ceiling windows, radiates elegance and tranquillity.
