Le Coq aux Champs is a Michelin-starred fine dining restaurant located in Soheit-Tinlot in the Condroz region of the Ardennes, approximately 28 kilometres from Liège. Chef Christophe Pauly — one of the founding members of the Génération W culinary collective — has been at the helm since 2003, earning his first Michelin star in 2005 at the age of just 26. His cooking is characterised by a voluntary concision of ingredients that allows each element to shine fully, with a masterly command of sweet and sour flavours and subtle, precisely constructed sauces. The elegant stripped-back interior of this handsome country stone house creates a serene and focused atmosphere in which the food is entirely central.
