MOLÁM Thai Canteen & Bar is Kraków’s most celebrated international restaurant and the only Thai establishment in Poland to be awarded the Michelin Bib Gourmand, an honour it has held for three consecutive years since 2023. Founded by Chef Tomek Muza, a Polish chef who spent nearly two decades in London honing his craft at Thai establishments including the renowned Smoking Goat in Soho, the restaurant brings an authentic and deeply researched vision of Thai cuisine to the heart of Kraków. The menu is structured around all four regions of Thailand, delivering the hallmark balance of sweet, sour, spicy, and salty flavours that defines great Thai cooking. Open-fire cooking is the kitchen’s defining technique, lending an intensity and smokiness to dishes that closely mirrors the experience of eating at a Bangkok street canteen. Diners are encouraged to share multiple dishes, and the kitchen operates as an open theatre, with guests able to sit at the counter for a front-row view of the chefs at work. Local and ethically sourced Polish ingredients are integrated wherever possible, with seasonal vegetables and free-range meats used alongside authentic Thai aromatics and spices. A range of inventive Thai-inspired cocktails adds to the lively, informal atmosphere.
