Restaurant Vermeer is one of Amsterdam’s most enduring fine dining institutions, having operated since 1988 within the atmospheric NH Collection Amsterdam Barbizon Palace — a hotel composed of four historic 17th-century canal houses near Prins Hendrikkade. Since May 2024, the kitchen has been led by Chef Sebastian Baquero Garces, who has brought fresh energy and a refined farm-to-table philosophy rooted in classic French technique. The menu is built around three conceptual pillars — sea, land, and earth — with seasonal ingredients sourced directly from Dutch farmers, fishermen, and artisan producers. The result is cuisine that is intricate and sometimes complex, yet always grounded in a profound respect for ingredient quality and local terroir. The dining room’s lighting is deliberately inspired by the paintings of Johannes Vermeer, casting a quiet, focused atmosphere that rewards contemplation. In September 2024, the restaurant expanded with Vermeers Wijnkamer — an intimate wine room offering rotating glass pours and refined bites without a reservation. Sommelier Dannis Apeldoorn curates both programs with precision and warmth. Vermeer holds a Michelin star and remains one of Amsterdam’s most thoughtful and consistently excellent fine dining destinations.
