Sen Omakase is one of the most ambitious and authentic Japanese dining destinations in Spain, holding one Michelin star since the 2025 edition of the guide and operating from a beautifully designed space on Calle de Santa María Magdalena in Madrid’s Chamartín neighbourhood. The restaurant was opened in May 2024 by chef Steven Wu, who trained extensively in Spain and Belgium before travelling to Japan to refine his craft under masters of sushi in Tokyo and later in Kyoto at the nine-generation Michelin-starred restaurant Uosaburo, where he deepened his understanding of kaiseki cuisine. Sen Omakase offers a single menu: a surprise omakase of thirty to thirty-five courses that unfolds across four distinct rooms, each offering a different dimension of the experience. Diners begin in a garden-like reception space, move to a twelve-seat counter where the chef prepares each dish in full view, then progress to a traditional tea ceremony room for desserts, and conclude in a cocktail bar accompanied by Japanese whisky and music. The cuisine is rooted in the five classical preparation and cooking methods of kaiseki and places absolute emphasis on seasonality and the harmony between visual presentation and flavour. Chef Wu combines premium local Spanish produce with Japanese ingredients, weaving together Spanish identity and Japanese tradition with subtlety and rigour. The drinks list features over two hundred and fifty wines spanning Burgundy to Japan. Sen Omakase operates Tuesday to Saturday and is reservation-only.
