Description
Shoukouwa is Singapore’s only two-Michelin-starred Japanese restaurant and one of the most exclusive sushi experiences in Southeast Asia. A venture by the Emmanuel Stroobant Group Luxury Collection in partnership with Japanese cuisine specialist Hanachiyo, the restaurant is located steps from the Merlion at One Fullerton and seats just eight guests at the main sushi bar, with a further six in the private dining room. The name Shoukouwa translates to ‘flavour and harmony,’ and the restaurant’s entire philosophy is built around delivering the purest possible expression of Edomae sushi through impeccable seasonal ingredients. Head Chef Junya Kudo, who hails from Nagoya, champions a refined and elegant approach, sourcing white fish alongside other luxury seasonal produce. Seafood is flown in from Tokyo’s Toyosu Market four times a week, with sushi rice sourced from Yamagata and Ishikawa prefectures and blended in a specific ratio to achieve the ideal texture. Omakase menus range from the Mio lunch experience to the exclusive Hana dinner, encompassing assorted sashimi, a variety of cooked dishes, 13 or more pieces of nigiri, miso soup, Japanese omelette, and dessert. No perfume or aftershave is requested, maintaining the integrity of the aromas present. The service is direct and intimate, establishing a genuine bond between chef and diner across the counter.
