Description

Sushi Sho is one of the most celebrated Japanese restaurants in Scandinavia and has held a Michelin star continuously since 2016, cementing its status as a standard-bearer for authentic edomae omakase in Stockholm. The restaurant is located on Upplandsgatan in the Vasastan neighbourhood and seats just twelve diners at a single wooden counter, creating an experience defined by proximity to the chef and a deeply personal connection to each preparation. At the helm is chef Carl Ishizaki, who has dedicated his career to the classical Japanese art of Edomae sushi — a style originating in nineteenth-century Tokyo that emphasises the careful aging, curing, and seasoning of fish to develop depth of flavour rather than relying solely on freshness. Each piece of nigiri is formed directly in front of diners and served at the precise moment it is ready, following the traditional rhythm of an omakase progression that moves through a sequence of around fifteen preparations chosen entirely by the chef. The fish is sourced with meticulous care, and Swedish produce plays an important supporting role, with seasonal ingredients from local waters incorporated alongside premium Japanese imports. The rice is seasoned with a signature blend of vinegars developed over years of refinement and is regarded as one of the finest in the Nordic region. The atmosphere is calm, focused, and deeply respectful of the Japanese counter dining tradition. Sushi Sho operates on a reservation-only basis and is consistently one of the most sought-after tables in Stockholm.
