Thevar has risen rapidly to become one of Singapore’s most celebrated fine dining restaurants, earning two Michelin stars and a position on Asia’s 50 Best Restaurants list. Founded in 2018 by Penang-born Chef Mano Thevar, the restaurant recently relocated to a new flagship space at 16 Mohamed Sultan Road, nearly twice the size of the original Keong Saik location, seating 28 in the main dining hall, two to three at a chef’s table, and up to ten in a private dining room with its own kitchen and entrance. Chef Mano Thevar draws on his South Indian heritage and classical French training to create a cuisine that is at once deeply rooted in tradition and boldly contemporary. Complex spice blends and regional Indian ingredients are applied with exacting French precision, producing dishes of extraordinary depth and vibrancy. The tasting menu, priced at SGD 298 per person, changes regularly based on seasonal availability and the chef’s evolving inspirations. Signature dishes include the Chettinad chicken roti, Brittany lobster in curry beurre blanc, and a celebrated truffle maitake mushroom samosa. The wine list spans over 600 labels with options for wine, sake, and non-alcoholic pairings. Service is smart-casual in spirit but meticulous in execution.
