Spectrum is one of Amsterdam’s most celebrated restaurants, holding two Michelin stars within the grand surroundings of the Waldorf Astoria Amsterdam, set in a beautifully restored 17th-century canalside mansion on the Herengracht. At the helm is Executive Chef Sidney Schutte, a chef of remarkable international range who trained at De Librije and the Landmark Mandarin Oriental in Hong Kong, and who today runs multiple acclaimed restaurants across Asia and Latin America. At Spectrum, Schutte channels the full breadth of his culinary talent into a cuisine that is intellectually adventurous and technically flawless. The finest Dutch produce provides the foundation, while vivid Asian flavourings, spices, and modern techniques elevate each dish into something unexpected and precise. The result is a dining experience that is at once cosmopolitan and deeply rooted in local terroir. A seven-course tasting menu is the centrepiece of the dining experience, with a dedicated vegetarian option of equal creativity and ambition. The restaurant’s interior, located on the lower ground floor with views over a private courtyard garden, is elegant and intimate.
