The restaurant holds two Michelin stars, which it earned in 2022 following the arrival of Finnish chef-patron Mickael Viljanen, who had previously earned two stars at The Greenhouse on Dawson Street. The partnership between Viljanen and Chapter One’s founder Ross Lewis brought together two of Ireland’s greatest culinary names and resulted in a complete reimagining of the restaurant’s already distinguished heritage. Viljanen’s cooking is rooted in the classical French canon but is elevated by a precision, delicacy, and visual artistry that reflects his Nordic background. Prime luxury ingredients are the foundation of the tasting menu: Donegal lobster, Limousin sweetbreads, and meticulously sourced seasonal produce are transformed into beautifully balanced dishes of extraordinary refinement. The dining room has been thoughtfully redesigned, featuring floor-length linen, striking Irish art and craft, and a convivial warmth that makes even the most elaborate tasting menu feel intimate and joyful. Chapter One offers a lunch menu Thursday to Saturday and dinner Tuesday to Saturday, with tasting menus ranging from set lunch to a full evening degustationexperience.
