Elkano is a legendary Michelin-starred restaurant in the fishing village of Getaria, on the Bay of Biscay coast approximately thirty minutes from San Sebastián, and one of the most celebrated and sought-after seafood tables in the world. Founded in 1964 by Pedro Arregi and now led by his son Aitor Arregi, the restaurant has elevated the ancient Basque tradition of grilling fish over an open wood fire to an art form of the highest order, earning global recognition including a place in the top twenty-five of the World’s 50 Best Restaurants list. The unquestioned star of the menu is the whole turbot — sourced from the surrounding Cantabrian Sea and grilled over embers with absolute precision, then carved tableside with extraordinary skill by Aitor himself.
