Charbon is a bold and distinctive grill restaurant on the Grote Markt in Ypres, built around a passion for fire, quality produce, and the art of grilling over charcoal. Chef Gregory Degraeve, a seasoned cook who trained under Kobe Desramaults, has created a restaurant where the Josper charcoal oven is the centrepiece of the experience â imparting a distinctive, authentic smokiness to everything that leaves the kitchen. The menu is a celebration of grilling in all its forms: starters include grilled squid, Josper gambas, and lacquered pork belly, while the main event offers premium cuts such as ribeye, bavette, and steak, as well as grilled fish and seasonal vegetables. The philosophy is one of genuine enjoyment: no rush, honest food, and generous hospitality. The restaurant also offers hotel accommodation above the dining room, making it a complete address for an Ypres stay.
