La Degustation Bohême Bourgeoise is a Michelin-starred restaurant in Prague’s Staré Město (Old Town), one of the Czech capital’s most celebrated and long-standing fine dining addresses, and widely recognized as the pioneering restaurant that first demonstrated the potential of Czech culinary heritage as a serious subject for contemporary haute cuisine. Led by chef Oldřich Sahajdák, the restaurant draws inspiration from Marie B. Svobodová’s 1894 Czech cookbook — a historic document of Bohemian middle-class cuisine — and builds a seasonally driven tasting menu of modern Czech gastronomy that honors the depth and richness of the country’s culinary traditions while engaging them with contemporary technique, precision, and creative intelligence. The menu reflects the rhythm of Czech seasonal ingredients: game in autumn, root vegetables in winter, spring produce and early summer herbs, wild mushrooms from Bohemian forests. Each dish is carefully constructed to balance authenticity with refinement, creating a dining experience that is simultaneously culturally rooted and genuinely modern.
