L’Eau Vive is a two-Michelin-starred fine dining restaurant located in Profondeville, just outside Namur, where chef Pierre Résimont has built one of Wallonia’s most celebrated and enduring gastronomic destinations over more than three decades. Résimont, who earned his first Michelin star in 1994 at the age of 25 â making him the youngest starred chef in Belgium at the time â has continued to evolve his culinary vision with remarkable consistency. The restaurant is housed in a beautifully converted 18th-century building beside a stream, providing a peaceful and intimate natural setting that perfectly complements the refinement of the kitchen. The cooking is creative and technically precise, with dishes that balance seasonal ingredients, bold flavour, and elegant presentation.
