Sushi Yoshitake is one of the world’s most acclaimed sushi restaurants, holding three Michelin stars and widely regarded as a masterclass in traditional Edomae technique. Located in the Ginza district of Tokyo, the restaurant is led by Chef Masahiro Yoshitake, who trained under legendary sushi master Shinji Kanesaka before establishing his own counter. The omakase experience at Yoshitake is deeply personal and intimate: guests sit at a small counter directly opposite the chef as he prepares and serves each piece by hand, maintaining a precise control over temperature, pressure, and timing that distinguishes great sushi from merely excellent sushi. The fish is sourced from Japan’s finest markets, with emphasis on what is most exceptional at any given moment in the season — a philosophy that makes every visit subtly different. The vinegar-seasoned rice (shari) is calibrated to match each piece of fish with remarkable precision. There is no menu; the omakase is entirely in the chef’s hands, and guests place their trust accordingly. Side dishes and tamago preparations are equally refined.
