FG Restaurant is a two-Michelin-starred fine dining restaurant in Rotterdam, led by chef François Geurds — one of the Netherlands’ most celebrated and technically innovative culinary figures, a chef whose approach to cooking combines the classical precision of high-level French gastronomy with an experimental spirit rooted in his concept of the ‘flavor laboratory.’ The restaurant maintains its own dedicated taste research facility and operates a partnership with Foodlab Leiden — a collaboration between Leiden University and Leiden University of Applied Sciences — reflecting Geurds’s conviction that culinary excellence requires continuous scientific and creative inquiry rather than the repetition of established techniques.
