Kokotxa is a Michelin-starred fine dining restaurant tucked into the heart of San Sebastián’s Old Town, just steps from the port and the Basilica of Santa MarÃa del Coro. Its name pays homage to one of the most iconic preparations in Basque gastronomy â kokotxas, the prized dewlap of hake or cod â and the kitchen fully honours that culinary heritage while taking it in a confident and contemporary direction. Chef Daniel López and his partner Estela Velasco front of house run the restaurant with a distinctly personal touch, combining technical finesse, high-quality market ingredients, and a genuine warmth of hospitality that sets Kokotxa apart from more formal starred establishments. The tasting menus â a compact market menu and a fuller tasting option â unfold as a series of beautifully conceived and precisely executed courses that balance Basque tradition with invention and seasonal freshness. The sommelier’s command of northern Spanish wines adds a further dimension to the experience. Kokotxa is the only Michelin-starred restaurant in San Sebastián’s legendary Old Town.
