Akelarre is a three-Michelin-starred restaurant perched on the slopes of Mount Igueldo overlooking San Sebastián, offering one of the most spectacular dining settings in the Basque Country. Led by chef Pedro Subijana — one of the founding fathers of the New Basque Cuisine movement alongside Juan Mari Arzak — the restaurant presents three distinct tasting menus, each reflecting a different culinary philosophy: one more rooted in tradition, the others in bold innovation. The cooking combines rigorous technical mastery with a deep engagement with the finest seasonal produce and the culinary heritage of the Basque coast, producing dishes that are visually striking and gastronomically profound. In 2017, Subijana expanded Akelarre into a full luxury hotel and spa, allowing guests to extend their stay and fully immerse themselves in the panoramic natural setting above the Bay of Biscay. Service throughout is impeccable and warm, reflecting decades of accumulated expertise. Akelarre has been awarded three Michelin stars since 2007 and remains one of the essential gastronomic addresses in Europe.
