Noma was a three-Michelin-starred restaurant in Copenhagen, widely considered one of the most influential and celebrated restaurants in the history of modern gastronomy. Founded by chef René Redzepi and Claus Meyer in 2003, it pioneered the New Nordic cuisine movement, foregrounding foraged, seasonal, and locally sourced Scandinavian ingredients presented through extraordinary creativity and technical innovation. Noma topped the World’s 50 Best Restaurants list five times and held three Michelin stars. The restaurant operated through three distinct seasonal menus — seafood, vegetables, and game and forest — each reflecting a different dimension of the Nordic landscape. In January 2023, Redzepi announced that winter 2024 would be Noma’s final regular restaurant season, after which it would transform into Noma 3.0 — a food innovation laboratory and test kitchen focused on product development, pop-ups, and culinary research. The restaurant ceased regular dining service at the end of 2024. Its website remains active as Noma Projects. It remains a defining institution in global culinary history, and its influence continues to shape fine dining worldwide.
