Shisen Hanten by Chen Kentaro is Singapore’s only specialist in Chuka Szechwan Ryori, a distinctive fusion of traditional Szechuan cuisine adapted through the lens of Japanese culinary refinement. Located on the 35th floor of Hilton Singapore Orchard with sweeping views over Orchard Road, the restaurant celebrates the seven fundamental flavours of Szechuan cuisine: sour, pungent, hot, sweet, bitter, aromatic, and salty. Chef Chen Kentaro is the third-generation heir of a culinary dynasty founded by his grandfather Chen Kenmin, widely regarded as the father of Szechuan cuisine in Japan, and continued by his father Iron Chef Chen Kenichi, nicknamed The Szechuan Sage. Since opening in Singapore in 2014, Chef Kentaro has earned the restaurant one Michelin star and built a loyal following for his precise, ingredient-driven approach to this rare and nuanced cuisine. Following a major renovation completed in December 2024 to celebrate the restaurant’s tenth anniversary in Singapore, the dining room now features an elegant neutral palette, a striking hanging artwork, and a new Chef’s Table seating eight guests for an intimate, exclusive experience. Four private dining rooms, each named after an iconic Szechuan city, accommodate groups from six to thirty. Signature dishes include the legendary Chen’s Mapo Doufu, Stewed Fish Fillet in Spicy Szechwan Chilli Pepper, and a rotating selection of seasonal specialties including Foie Gras Chawanmushi with Crab Roe Soup.
